Scrumptious Streusel Molasses Muffins

Servings: 6

Muffin:

1 1/2 cup whole wheat flour

1 tsp baking soda

1 1/2 tsp baking powder

1/2 TB cinnamon

3/4 cup applesauce

1/2 cup molasses

3 TB pure maple syrup

1/2 tsp almond extract

 

Scrumptious Streusel:

3-5 TB almond butter

1/2 cup oat flour

1/2 cup maple sugar

Preheat oven to 350℉

Muffin:

  1. In a large bowl, whisk dry ingredients together.
  2. In a separate bowl, whisk wet ingredients together. Pour into dry ingredients.
  3. Line a muffin tin with 6 liners and fill each one to the top. Set aside.

Streusel:

  1. Heat almond butter on the low heat in a medium saucepan for 2 minutes.
  2. Remove from heat and add oat flour and maple sugar.
  3. Mix with a wooden spoon.  
  4. Transfer mixture to a large bowl and use hands to form crumbs.  
  5. Sprinkle on each muffin.
  6. Bake for 23-25 minutes.
  7. Remove from oven and let sit for 10 minutes.

Nutrition Per Serving:  370 calories, 8g total fat, 1.5g saturated fat, 0g trans fat, 0mg cholesterol, 250mg sodium, 71g carbohydrate, 5g fiber, 40g sugar, 37g added sugar, 8g protein
