Scrumptious Streusel Molasses Muffins

Remember when you were a kid and you’d wake up on Sundays to your parents pouring fresh coffee, reading the newspaper and drenching pancakes in maple syrup? That’s what inspired these muffins. The stillness and hopefulness of a classic Sunday morning of childhood.


Muffin :

  • 1 1/2 cup whole wheat flour
  • 1 tsp baking soda
  • 1 1/2 tsp baking powder
  • 1/2 TB cinnamon
  • 3/4 cup applesauce
  • 1/2 cup molasses
  • 3 TB pure maple syrup
  • 1/2 tsp almond extract

Scrumptious Streusel :

  • 3-5 TB almond butter
  • 1/2 cup oat flour
  • 1/2 cup maple sugar


Preheat oven to 350℉

Muffin :

1- In a large bowl, whisk dry ingredients together.

2- In a separate bowl, whisk wet ingredients together. Pour into dry ingredients.

3- Line a muffin tin with 6 liners and fill each one to the top. Set aside.

Streusel :

1- Heat almond butter on the low heat in a medium saucepan for 2 minutes.

2- Remove from heat and add oat flour and maple sugar.

3- Mix with a wooden spoon.  

4- Transfer mixture to a large bowl and use hands to form crumbs.  

5- Sprinkle on each muffin.

6- Bake for 23-25 minutes.

7- Remove from oven and let sit for 10 minutes.
