Donut worry! You got this! (Sorry, I had to)

For the “mini me’s” in your house! Let’s be honest, we all love donuts, but not around our stomachs. Now you don’t have to feel bad! These donuts are baked, not fried and contain only natural and plant based ingredients! Your kids will devour them and you won’t mind!

Mini Chocolate Donuts :

  • 1 cup brown rice flour
  • 1 tsp baking soda
  • 1/4 cup cocoa powder
  • 1/3 cup almond milk
  • 1 tsp vanilla extract OR almond extract
  • 3/4 cup maple syrup

Cocoa Frosting :

  • 1 cup pitted dates or (1/2 cup date paste)
  • 3 TB creamy almond butter
  • 1 TB almond milk
  • 4 TB cocoa powder, unsweetened
  • Almond Frosting:
  • 1/2 cup creamy almond butter
  • 6 TB pure maple syrup

Preheat  oven to 350℉

1- In a medium sized bowl, whisk the flour, baking soda and cocoa powder until combined.

2- In a separate bowl, mix the wet ingredients until combined and add to dry ingredients, mixing until completely incorporated.

3- Spoon mixture into the holes of a non-stick mini donut pan.

4- Bake for 12 minutes or until firm to touch.

6- Remove from oven and let sit for 20 minutes, then remove to a wire rack.

While the donuts are baking, make the cocoa frosting :

1- Blend all ingredients except the cocoa powder.

2- When a creamy consistency is reached, add cocoa powder. Set aside.

Almond Frosting :

1- Blend all ingredients together. Set aside.

Frosting the donuts :

1- Spread desired frosting on the donuts with a butter knife. Using a wet finger,  smooth the frosting to create a shiny smooth service.
