Mini-Me Chocolate Donuts

Servings: 12

Mini Chocolate Donuts:

1 cup brown rice flour

1 tsp baking soda

1/4 cup cocoa powder

1/3 cup almond milk

1 tsp vanilla extract OR almond extract

3/4 cup maple syrup

Cocoa Frosting:

1 cup pitted dates or (1/2 cup date paste)

3 TB creamy almond butter

1 TB almond milk

4 TB cocoa powder, unsweetened

Almond Frosting:

1/2 cup creamy almond butter

6 TB pure maple syrup

Preheat  oven to 350℉

  1. In a medium sized bowl, whisk the flour, baking soda and cocoa powder until combined.
  2. In a separate bowl, mix the wet ingredients until combined and add to dry ingredients, mixing until completely incorporated.
  3. Spoon mixture into the holes of a non-stick mini donut pan.
  4. Bake for 12 minutes or until firm to touch.
  5. Remove from oven and let sit for 20 minutes, then remove to a wire rack.

While the donuts are baking, make the cocoa frosting:

  1. Blend all ingredients except the cocoa powder.  
  2. When a creamy consistency is reached, add cocoa powder. Set aside.

Almond Frosting:

  1. Blend all ingredients together. Set aside.

Frosting the donuts:

 

  1. Spread desired frosting on the donuts with a butter knife. Using a wet finger,  smooth the frosting to create a shiny smooth service.

Nutrition Per Serving:  260 calories, 8g total fat, 1.5g saturated fat, 0g trans fat, 0mg cholesterol, 150mg sodium, 47g carbohydrate, 3g fiber, 27g total sugar, 19g added sugar, 5g protein
