  • 2 cups store bought pico de gallo, or homemade
  • 2 fresh jalapenos, very thinly sliced

Equipment Needed:

  • 9”x3” Springform pan without the bottom or 3”x 9” baking ring to mold dip
  • Large Platter:  at least 12” in diameter

Make the First Layer, Smoked Beans:

Add liquid smoke, juice from 1 lime and vegetable stock or water if using.  Process until very smooth, adding a little more water if needed. The mixture should be thick, but smooth.

2- Remove from the food processor.

3- Center the baking ring on the serving platter. Spoon the bean mixture into the mold and smooth with an offset spatula.

Make the Second Layer, Butter Lettuce or Green Cabbage:

1- Scoop out avocado flesh and in a bowl, mash the avocado with the juice from the other lime until very smooth and creamy.

2- Mix the avocado cream with the lettuce, until well combined.

3- Pour over black bean layer and smooth top.

Make the Third Layer:

1- Spread the pico de gallo on top of the lettuce layer, tamping it down on top of the lettuce.

2- Top with thinly sliced jalapenos.

3- Cover with plastic wrap and refrigerate for 2-3 hours.

Remove from the refrigerator and serve with chips of your choice!
