Winning Super Bowl Party Vegan Dip

Winning SuperBowl Weekend Dip! Easy, Vegan, Healthy! How do you usually feel
after going to a Superbowl party and indulging in fat laden, sugar, salt, oily snack?
Guilty? Full? nauseous? Now you can be the life of the party by bringing this
super healthy and adorable deilicous layere dipe, even an anti-healthnut wil love.
Mom’s, your kids will love this too. Serve with crudite or ezekial tortilla chips!

Equipment Needed :

  • 9” x 13” shallow dish
  • Funnel
  • Offset spatula

Ingredients

For the Dip:

  • 16 oz. Homemade or store-bought hummus (16 oz.)
  • 2-cups  finely chopped napa cabbage, iceberg lettuce or romaine lettuce
  • 16 oz. store bought salsa, drained and squeezed dry 
  • 16 oz. homemade or store bought guacamole
  • 4 cups baby spinach

For the Cashew Cream Yard Lines:

Blend together:

  • 1 cup raw cashews, soaked in hot water for 30 minutes
  • ½ cup – 2/3rds cup water
  • 1 TB lemon juice
  • 1 tsp. Apple cider vinegar
  • ¼ tsp. Dijon vinegar

Instructions

  1.  In a 9” x 13” shallow baking dish, slather the hummus to cover the dish.
  2. Add napa cabbage or other lettuce on top, to cover.
  3. Next add squeezed dried salsa.
  4. Place guacamole and spinach in a food processor and process until smooth..  Slather on top of the salsa.
  5. Fill a squeeze bottle with cashew cream and make “yard lines” on top of the Football field!

Serve with Ezekial chips and/or crudite! Happy Superbowl Sunday!
