This is a recipe by the famous Ukrainian Chef Klopotenko.  He is underground, at the time of this writing, feeding the people under siege to keep them alive.  By  making these easy, delicious and nutritious  breakfast cookies, we are keeping traditional Ukrainian recipes alive!  Let’s send love from our hearts to the people of Ukraine and see them victorious. 

Ingredients

  • 1 banana, 8-oz, mashed
  • 1/4 c. organic rolled oats (not quick cooking) add more to make consistency less wet
  • 4 dried apricots, or pitted dates, finely diced
  • 1/4 c. chopped walnuts to 1/8th inch pieces

Instructions

  1. Preheat Oven to 360 degrees Farenheit
  2. Mix all of the ingredients together.  
  3. On a parchment lined sheet pan, scoop out mixture to form 3 equal sized cookies. 
  4. Bake for 15-20 minutes or until the cookies are golden brown.

To Freeze:

  • Cookies can be refrigerated or frozen, and by the way, I love eating them frozen.  So double, triple, even quadruple the recipe so you can have breakfast or a snack or easy dessert on the go!
