This recipe is by the famous Ukrainian Chef Klopotenko.  He is underground, at the time of this writing, feeding the people under siege to keep them alive.  By making these easy, delicious and nutritious  breakfast (or anytime) cookies, we are keeping traditional Ukrainian recipes alive!  Let’s send love from our hearts to the people of Ukraine and see them victorious.

Ingredients

  • 2 bananas, (about 8 ounces each), mashed 
  • 1/2 cup organic rolled oats (not quick cooking), more if needed 
  • 8 dried apricots, or pitted Medjool dates,finely diced
  • 1/2 cup chopped walnuts to ⅛-inch pieces

Directions

Preheat oven to 350℉ 

Mix all of the ingredients together, adding more oats, if needed.  On a parchment lined sheet pan, scoop out mixture to form 6 equal sized cookies. Bake for 15-20 minutes or until the cookies are golden brown.

The cookies can be refrigerated or frozen–my favorite.  So double, triple, even quadruple the recipe so you can have this special breakfast, snack or dessert treat at the ready!
