Test-Ed Cookies

When commissioned to plant-base one of Ed’s all-time favorite cookies, I was overcome with incredible nerves. Would I be able to do this? Will he like my version? After two attempts, one of which ended up being Juanita’s Favorite Cookies, the recipe was complete and test-Ed approved! –Ashley


  • 1 cup whole rolled oats, toasted
  • ½ cup chopped walnuts, toasted
  • ½ cup chopped pecans, toasted
  • ½ cup maple sugar
  • ¼ cup pure maple syrup
  • 4 TB Almond butter
  • ½ TB ground cinnamon
  • ½ tsp. baking powder
  • 3 pitted dates


Preheat oven to 350℉

1- Toast oats, walnuts and pecans in the oven for 15 minutes.  

2- In a medium bowl mix together maple sugar, maple syrup, almond butter, ground cinnamon and baking powder.

3- Add toasted oats and nuts to the mixture.

4- Using your hands, tear  apart dates into small pieces, and fold into mixture.

5- Using your hands, roll cookie dough into 8 equal sized balls.

6- Place on a silicone or parchment lined cookie sheet.

7- Gently press down on each cookie with the palm of your hand, creating flat round cookies.

8- Bake for 15 minutes.

9- Remove from oven and let sit for 10-15 minutes.  These will have a crunchy exterior with a moist rich interior!
