At Garden of Eydie we are creating a special category of recipes called Test-Ed, my carnivore loving husband, Ed! 

If Ed likes one of our plant based recipes, it’s guaranteed anyone who eats will love it! So it is with these cookies.  They are super easy to make and are slightly crispy on the outside and a bit chewy on the inside, and oh so yummy!

Ingredients

  • 1 cup old fashioned rolled oats (not quick cooking)
  • ½ cup chopped walnuts
  • ½ cup chopped pecans
  • ½ cup maple sugar
  • ¼ cup pure maple syrup
  • ¼ cup almond butter
  • 1-½ teaspoons ground cinnamon
  • ½ teaspoon baking powder
  • 3 pitted Medjool dates, diced to ¼-inch

Directions

Preheat the oven to 350℉

  1. Toast the oats, walnuts and pecans on a parchment lined sheet pan for 10-15 minutes, or until lightly toasted.
  2. In a medium bowl, mix together maple sugar, maple syrup, almond butter, ground cinnamon and baking powder.
  3. Stir in toasted oats, nuts and dates until thoroughly combined.
  4. Using your hands, separate the dough into 8 equal sized balls.
  5. Place on a silicone or parchment lined baking sheet. Gently press down on the balls to flatten the cookies.
  6. Bake for 15 minutes, or until lightly browned.  Remove from the oven and allow the cookies to cool for 10-15 minutes before serving.
