It’s early October and fall has officially arrived, but it’s still hot in Southern California, so a light salad is the way to go. Plus, it’s the perfect time to say  thank you and goodbye to the last few stoned fruits wanting to be admired and enjoyed this season! This fortuitous stone fruit and arugula salad pays tribute to 5 different types of stone fruits, providing different tastes and textures. It’s fortuitous because it has 8 ingredients, which is our key number this October for many reasons! Eight is a number that represents health, wealth, prosperity and fertility. It’s the perfect way to help you close out the summer, and start preparing your body, (and your garden!) ready for Autumn. 

Fortuitous Stone Fruit and Arugula Salad

Servings: 3-4

For the Salad:

  • (1) 5-oz. box, baby arugula
  • 1 yellow peach, ¼” dice
  • 1 white peach, ¼” dice
  • 1 red plumb ¼” dice
  • 1 black plumb ¼” dice
  • 1 nectarine ¼” dice

For the Dressing:

  • 1 TB honey
  • ¼ cup orange juice
  • ¼ cup mint or basil, finely chopped

 For the Salad:

  1. Place all of the salad ingredients in a beautiful bowl or serving dish.
  2. Toss & Enjoy!

For the Salad Dressing

  1. Mix all ingredients together until taste is just right for you
  2. Pour over the salad, and Serve!
