Spinach Soup, the Medical Medium Way

This soup by the Medial medium is an ideal chilled soup to drink for health, on a daily basis.  It’s also wonderful  to serve as a shooter for a summertime party hors d’oeuvre.  I wish I would have been the creator of this recipe, it’s that delicious.  The ratio of ingredients is perfectly balanced, no tweaking is necessary.  Quick and easy, this has become one of the staples in my diet.  Try it, you’ll fall in love with it!

Equipment needed: small funnel if serving in a shooter

Ingredients

  • 1 pint grape or cherry tomatoes 
  • 1 garlic clove, minced 
  • juice of one orange 
  • 1 stalk celery 
  • 4 cups organic baby spinach  (1- 5 ounce box) 
  • 2-3 basil leaves 
  • cucumber noodles (optional)---I always add these—can be diced, as well

Directions

In a high speed blender place the tomatoes, garlic, orange juice and celery and blend on high until very smooth.  Add the spinach one handful at a time and blend until smooth.  Add basil leaves and blend again, to incorporate.  Serve as is, or make cucumber noodles and pour the soup over the noodles for a very nice and refreshing addition.

butterfly Cook's Notes:

To serve as a party hors d’oeuvre, use a small funnel, place inside a shooter glass and pour in the soup.  Top with finely diced chopped tomato and cucumber. Add a tiny basil leaf on top.
