Watermelon Margherita Pizza
Makes: 1 pizza (can be doubled, tripled, etc.)
It’s National Watermelon Day and most people on the web make a beautiful watermelon pizza with coconut cream sauce and lots of berries on top. I love Trompe l’oeil (a visual illusion in art). So I wanted to make this raw fruit pizza look like a real Margherita pizza. We used mashed banana for the crust, blended strawberries for the tomato sauce, whipped coconut cream for the mozzarella cheese and mint. Easy to make and such a delightful surprise for your guests!

Ingredients
- 1-inch thick round slice of watermelon, with the skin
- 1-2 ripe frozen sliced bananas, slightly thawed
- 1 cup quartered, very ripe, super red strawberries
- ½ cup chilled coconut milk, we love this brand
- ¼ teaspoon vanilla extract (alcohol free)
- handful of mint leaves, torn
Directions
- Place the watermelon slice on a wooden board or serving platter.
- Add the bananas to a food processor and puree until smooth, Reserve.
- Place strawberries in a blender, or processor and puree until smooth. Reserve,
- Whip the chilled coconut milk with the vanilla extract with a handheld beater or food processor, until fluffy and will hold its shape,
- Pour the strawberry puree all around the watermelon to cover the red flesh.
- Place spoonful dollops of whipped coconut cream on the pizza to look like buffalo mozzarella.
- Make the crust: using your fingers, place the pureed banana all around the white flesh and green peel of the watermelon.
- Place torn mint on top.
Slice into 6 pieces and serve!
