Spicy Thai Salad Dressing

Spice up your salad with this spicy Thai salad dressing! Packed full of flavor, plus salt, oil, vinegar and sugar free means you can have as much as you like – guilt free! We love it paired with the summer staple Spicy Thai Raw Salad, but it goes well with a variety of your favorite raw dishes.

Ingredients
- ½ avocado, seeded and peeled
- ½ cup water
- 4 tablespoons lime juice
- 1 kaffir lime leaf, finely chopped (optional)
- 2-3 tablespoons cilantro, chopped
- 2-3 tablespoons fresh basil leaves, sliced
- 2 pitted dates (I used Medjool)
- 1 tablespoon peeled and minced ginger root
- 1 clove garlic, chopped
- ½ - 1 red chili such as fresno, or a serrano, seeded and finely chopped (use more for a spicier dressing)
Directions
Place all of the ingredients in the bowl of a food processor and blend until smooth. Pour over your favorite summer salad, or dress on a variety of other raw food for a spicy kick that’s sure to thrill your tastebuds.
