Stone Fruit Salsa with Sprouted Grain Tortilla Chips

Being stone fruit season at the farmers’ market, I couldn’t resist creating this texturally pleasing fruit salsa. Pick your favorite stone fruits, making sure to get a variety to include tart and sweet, and firm and soft. If you’d like, add more jalapeño or serrano for heat, and serve with these healthy tortilla chips.

Alphonso Mango and Curried Chickpea Salad

I love all of Yotam Ottolenghi’s cookbooks. He is incredibly inventive and creates the most flavorful dishes by using copious amounts of spices and herbs—a Garden of Eydie element in making great tasting recipes!

Apricot Soup Infused With Dates, Mint, and Basil

The Farmers’ market was brimming with ripe fragrant apricots and beautifully ripe tomatoes so I put two and two together and created this refreshing, mineral-rich, unique apricot soup!  It’s tart, yet sweet, has crunch from the alkalizing cucumbers and it makes for a perfect summertime soup. Your guests will love it. See the list of all the amazing benefits apricots bring to our health at the end of the recipe.

Lion’s Mane Mushrooms with Pea Shoots & Mango Sauce

Lion’s Mane Mushrooms are a beautiful snow white color and look like pom poms with a soft, feathery feel. It’s tremendously medicinal. Traditional Chinese medicine has prescribed it for stomach problems. It’s antibacterial and anti-inflammatory and is said to help with memory as well!

What I love about them is their meaty, almost lobster-like taste and texture. There are so many ways to use them to create very special dishes. We wanted to showcase the mushroom’s taste, so we kept the application simple. If you can find these delightful and healthful mushrooms, get them!

Smoked White Bean Hummus

To be served with Pita Chips, or this recipe can be used as a salad dressing or spread for a veggie wrap!
