I was inspired to make this Mexican fiesta salad/hors d’oeuvre after attending the Food Revolution Summit, this year.  One of the best goals for eating we can have is to try to count the number of plants in each dish.  Here we have over nine.  This means we are getting tons of nutrition in every bite!

Spicy Immune Boosting Vegetable Stock with Ginger and Mushrooms

I made this spicy, gingery, garlicky veggie stock for my best friend Gigi. Born in Texas, we both love spicy foods and she asked me for something to give her dishes a “kick”! Here it is! Not only does this stock tickle your tastebuds, it’s full of nutrients to make you feel great. Use this stock whenever a recipe calls for vegetable stock, or add vegetables to the stock and simmer until cooked through for a delicious, spicy vegetable soup. You can also use it in a salad dressing instead of oil or when making hummus!

BBQ Pinto Mini Tacos with Cabbage slaw

Who doesn’t love easy to eat “pick up” food!  Whether it’s for a kids lunch, or delicious appetizer/hors d’oeuvre for a party, these little tacos are sure to please everyone’s palate. Or you can make them large for an entree!  So many options. 

PS:  You can make your own fresh corn tortillas, or of course, use store-bought.

Strawberry Lemonade Icee

As a kid I remember Icee’s being “born!”  Coca cola icee…yum.  My older brother, Jay, used to ride his bike to the convenience store, get the icees and bring it right back home to me and my brother Stephen.  Such a treat, but not so healthy!  My garden is full of sweet strawberries, and a strawberry “icee” was calling my name! 

So yummy, so healthy and so refreshing, you and your kids will love it!

Mr. Potato Head

I grew up playing with a Mr. Potato Head and it brought back such fond memories. So I thought it would be fun to make an edible Mr. Potato Head, your kids will surely enjoy.  This is a “make it your own” meal and great to let the kids pick out the ingredients to make the potato look like a person!  Here’s what I did for this particular lunch:

Watermelon Margherita Pizza

It’s National Watermelon Day and most people on the web make a beautiful watermelon pizza with coconut cream sauce and lots of berries on top.  I love Trompe l’oeil (a visual illusion in art).  So I wanted to make this raw fruit pizza look like a real Margherita pizza.  We used mashed banana for the crust, blended strawberries for the tomato sauce, whipped coconut cream for the mozzarella cheese and mint.  Easy to make and such a delightful surprise for your guests!
