I grew up playing with a Mr. Potato Head and thinking about it brought back such fond memories. So I thought it would be fun to make an edible Mr. Potato Head, that your kids will surely enjoy! This is a “make it your own” meal and great to let the kids pick out the ingredients to make the potato look like a person!  This is a great way to let your kids play with their food!

Ingredients

For the Head:
1 small organic russet potato, baked or microwaved
For the Hair:
1 small red bell pepper, sliced to make spiky hair
For the Eyebrows:
cooked black beans
For the Eyes:
1 small watermelon radish (or Chioggia beets), very thinly sliced
For the nose:
1 small carrot, peeled and cut into the shape of a nose
For the lips:
  • 1 cherry tomato, sliced in half lengthwise, sliced in the middle for the mouth
  • hummus, either homemade or store-bought, to act as glue and dress the greens
  • curly sweet lettuce or  broccoli, or other types of sprouts as a bed for the potato.
  • Other veggies of choice:  I chose steamed broccoli and cauliflower

Directions

  1. Start from the top of the head down! Using a paring knife, make slits on top of the head for the bell pepper hair.
  2. Make small slits on the face for black bean eyebrows and place the radish  slice eyes under the eyebrows, using a bit of hummus as glue.  
  3. Make a vertical slit for the carrot nose.
  4. Make horizontal slits for the cherry tomato lips.
  5. Place potato head on hummus dressed greens and sprouts, and garnish with steamed veggies of choice.

Other ideas for facial features could include:  

How about adding a mustache or goatee!  If you have room, you can make an entire body using cauliflower florets for ears, broccoli hands, sugar snap pea shoes.  There are  loads of fun ideas.  Enjoy!
