Maple Roasted Winter Squash Avocado Toast

This is a wonderful recipe to make during the last months of winter, while you still have some winter squash on your counter, and they are on sale at the market.  The squash is still good to eat, so let’s  spring clean early, and make good use of these winter gems,filled with anthocyanins that will give you that summer glow.  Avocado toast sounds like a good idea!!  Roasting diced winter squash with a small amount of maple syrup, paired with avocado is super yummy for sure!


  • ½ pound winter squash, peeled, seeded and diced to ⅓-inch pieces 
  • 1 tablespoon  maple syrup or maple butter, divided 
  • freshly ground black pepper to taste 
  • 1 slice Ezekiel bread, toasted  
  • ½ avocado, mashed 
  • lemon juice to taste 
  • red pepper flakes (optional)


Roast the Squash:

Preheat the oven to 450℉

  1. Place diced squash on a parchment lined baking sheet.  Toss with  1 teaspoon maple syrup or maple butter, and bake for about 30 minutes, flipping halfway through,  or until lightly browned and cooked through.
  2. Add a few drops of lemon juice to the mashed avocado, to taste, along with black pepper and red pepper flakes.  
  3. Smear 1-2 teaspoons. maple syrup or maple butter on one side of the toasted bread.  Add mashed avocado and top with roasted winter squash.
