Mango Gazpacho Dressing
Yields: 2 cups

This mango tomato dressing is like a summer gazpacho. It’s delicious as a sauce my Cauliflower Salad. It’s so good, you can even eat it as a soup! It also tastes delicious on green salads, steamed or roasted vegetables, and even as a sauce on top for banana “nice cream”!
