I had so much fun in the kitchen creating this Flat Tummy Fennel Salad using ingredients that I sourced straight from my garden! 

Fennel is filled with nutritional benefits like helping to improve digestion and IBS, purifying our blood and regulating blood pressure, reducing our risk for cancers, and it’s a wonderful ingredient for appetite suppressant!

Come along on this cooking journey with me, as I create a super healthy salad from scratch using my garden’s organic produce and other ingredients that I found in my kitchen.

Ingredients

For the Salad:
  • Fennel Stalk & Fronds Reserved : about 3 full stalks
  • Spinach 
  • Frisé 
  • Purple, Red, and White Radish
For the Dressing:
  • Juice of 2 orange ( 2/3 cup )
  • 2 TBSP mustard
  • 2 TB Fig Vinegar
  • 1/2 lime juice
  • 2 tsp fennel seed

Directions

For the Salad:

  1. or tear your leafy greens if needed and add them to your salad bowl.
  2. Cut the fronds stems off of your fennel, and roughly chop or tear and add to your salad bowl.
  3. Dice fennel and radishes into thinly sliced cuts and add them into the salad.

For the Dressing:

  1. Combine all of your ingredients into a measuring cup
  2. Use a whisk to stir your ingredients together, then pour on top of your Flat Tummy Fennel Salad
