Dinosaur Pancake Sandwiches

Equipment needed: 5-inch Dinosaur cookie cutter or smaller
Ingredients
- ¾ cup whole wheat flour
- ¼ cup almond flour
- 1 teaspoon baking powder
- 1 cup almond milk
- 2 tablespoons pure maple syrup
- 1 small whole banana, with the skin
- ½ cup frozen blueberries, thawed
- 5 or more, thinly sliced strawberries
Directions
Preheat oven to 350℉
- In a medium sized bowl, whisk the whole wheat flour, almond flour and baking powder to combine.
- Combine the almond milk and maple syrup in a glass measuring cup, and whisk to combine.
- Slowly pour the wet ingredients into the dry ingredients and whisk until smooth. Transfer the batter to a measuring cup, making it easy to pour.
- Heat a 10” or larger non-stick pan over medium heat for a minute or two. Pour enough batter into the pan to fit the dinosaur cookie cutter, or 2 smaller cookie cutters of your kid’s choice. Turn down the heat to medium low and let the batter cook until bubbles start to form. Lift the pancake with a spatula to see if it is golden brown. Then flip when ready and cook on the other side for 2 minutes or so, or until it’s golden brown.
- Transfer to a wire rack, and repeat to make more pancakes.
- For the banana: Place the unpeeled banana on a sheet pan and place in the preheated. Roast until black and shiny, about 10-15 minutes. Peel the banana and use the back of a fork to press the flesh into a purée. Keep the oven on for reheating the sandwiches.
- For the blueberries: Press the blueberries with a fork into a chunky purée.
- For the strawberries: Hull and slice paper thin.
- Place the pancakes, separated on a cutting board. Spread a thin layer of the banana purée on the bottom layer. Then spread a thin layer of blueberry sauce and add sliced strawberries on top.
- For the top pancake of the sandwich, spread a thin layer of banana purée and place on top, banana side down, to make a sandwich.
- Place the dinosaur or other “cookie” cute on top of the sandwich and press down. You may need a paring knife to help release the sandwich from the very narrow sections.
Add berries around the sandwich and watch your kids eat and smile with delight.
