Carrot Dogs, the “New and Improved” Dodger Dog!

When you think of baseball, most people think of hot dogs, especially in LA for their famous Dodger Dogs!  Have you ever looked at the ingredients in a hot dog?  I’ll spare you the grimace you’ll get on your face!  Garden of Eydie has a healthy and delicious rendition that will make you and your guests want to “play ball” after eating as many as you want, as these vegan carrot dogs will energize you!



Ingredients

For the Marinade:
  • ¼ cup coconut liquid aminos
  • ¼ cup apple cider vinegar
  • ¼ cup dried porcini mushrooms
  • 1 tablespoon granulated garlic
  • 1 tablespoon granulated onion
  • 2 teaspoons liquid smoke
  • 1 teaspoon dry mustard
  • ½ teaspoon smoked paprika


For the Carrots:


Topping Ideas:
  • Mustard and ketchup
  • Tomato and onion salsa
  • Roasted red and yellow bell peppers, skinned and sliced
  • Jalapeños and onions

Directions

  1. Combine all of the marinade ingredients and pour in a pot large enough to hold the carrots (about 9-inches wide and at least 3-½-inches deep).
  2. Pour 3 cups of water into the pot.
  3. Bring the liquid to a boil, cover and turn down the heat to a simmer.  Cook for about 8 minutes, then check the carrot’s doneness by inserting a paring knife in the middle of the carrot.  You want a little resistance.  If it’s a bit hard, continue cooking for 2-3 minutes longer.  Ideally the carrot will be cooked through but still have a bite.
  4. Once cooked, remove the carrots from the pot.
  5. Pour ¾ cup of marinade into a sautè pan. Then place the carrots into the marinade and cook over medium heat.  Keep moving the carrots around as the liquid evaporates and the carrots become browned.  Add more marinade if needed.  Remove the carrots and make your “dogs”!, reserving the leftover marinade.
To Serve:
  1. Open the hot dog buns and paint it with some of the marinade.
  2. Place your carrot dog in the bun and hit a homerun with your toppings of choice!
