Brain Enhancing Steamed Broccoli & Potato Sauce

Studies show that participants who smelled a rosemary sprig before taking a test scored higher than those who didn’t!  Rosemary enhances the brain’s ability to perform.  Broccoli, a cruciferous vegetable, improves skin and hair, is anti-cancer, improves digestion and is a good source of vitamins and minerals. Infusing broccoli with rosemary, not only enhances the nutritional value, it elevates the taste of the broccoli in a beautifully fragrant way.

Ingredients

For the Broccoli Purée:
  • 1 cup broccoli florets
  • 1 rosemary sprig (3-inches)
For the Steamed Broccoli and Potato Side Dish:
3-4 large Yukon gold or red skinned potatoes, cleaned and diced into 1-inch pieces, and steamed, until tender ½ cup or more, broccoli purée Optional add-ins:  freshly ground black pepper, red pepper flakes, garlic granules, onion powder, ginger, chives, etc.

Directions

Make the Purée:
  1. Pour 2 inches or so of water into a 3-quart saucepan.  Add the rosemary sprig to the water, and place the steamer basket inside the pot.. Add the broccoli florets to the steamer basket, and cover.  
  2. Bring the water to a simmer over medium high heat, turn down to medium low,  and cook for about 3-5 minutes or until tender. 
  3. Remove the broccoli  from the steamer basket and place in a high speed blender or food processor.  Discard the rosemary sprig and pour in some of the rosemary infused steaming water to the broccoli.  Process to desired consistency, adding more of the steaming water as needed.
Make the Steamed Potato Side Dish:

Season the broccoli purée, if you wish, although it’s delicious as is. Place steamed potatoes on a plate and pour ½ cup, or more of the broccoli purée on top.

Make a double batch of the broccoli purée and save 1 cup for your baby!  You can all eat together.
