Dessert for your kids for breakfast?  You can have your “cake and eat it too” with this Garden of Eydie Banana Split Breakfast!  It’s made with very healthy, satisfying, delicious ingredients, so why not?  Oatmeal scoops sub for ice cream,  black mission figs for the “chocolate,” strawberries for the strawberry, and coconut for the “vanilla”.   I recently saw red bananas in the market.  I just had to try them.  They are smaller, sweeter, have more antioxidants, vitamin C, and  a lower GI score than their yellow counterparts. So if you can find them, try them.  This breakfast will delight your kids, give them energy, keep them focused and satiated all the way until lunch.  Parents, you’ll like it too.

Ingredients

  • 1 red or yellow banana peeled and halved lengthwise
  • 1 cup cooked oatmeal (I use this brand)
  • ¼ cup finely chopped dried black mission figs
  • ¼ cup unsweetened shredded coconut
  • ¼ cup finely chopped strawberries
  • 1 tablespoon maple syrup

Directions

Compose the Banana Split:

Place the sliced banana on a small rectangular plate or banana split bowl.

For the Oatmeal “ice cream” Balls:
  1. Make the oatmeal following the directions on the package.  I like to add a little less water so that the oatmeal will be less runny and will hold together to form a ball.   If it’s too runny, place it in a microwave safe bowl and cover with a paper towel.  Microwave in 20 second increments until the oatmeal absorbs all the extra liquid.  
  2. Using a spoon or small ice cream scooper, make three small 2-inch round balls of cooked oatmeal,  Place them between the slices of banana.
Add the toppings:

Cover one oatmeal ball with the prepared  figs, the middle ball with coconut and one with the strawberries. Drizzle a bit of maple syrup on top and serve.

It’s always fun to try new and unusual fruits and vegetables. Here’s more information about Red Bananas.  It reminds me,  if I see an unusual fruit or vegetable, to just buy it, google it, taste it and create a wonderful meal with it.  It makes eating so much more adventurous and fun!
