Apricot Soup infused with Dates, Mint and Basil

The Farmers’ market was brimming with ripe fragrant apricots and beautiful ripe tomatoes so I put two and two together and created this refreshing, mineral rich, unique apricot soup!  It’s tart, yet sweet, has crunch from the alkalizing cucumbers and it makes for a perfect summertime soup.   • 2 Medjool dates, pitted
  • ½ teaspoon, alcohol free vanilla extract
  • 1 sprig mint (about 3 leaves)
  • 2-inch piece of orange zest
  • 2-inch piece of lemon zest
  • 1 pound ripe apricots (about 6), pitted and chopped
  • 2 garlic cloves, minced, or more to taste
  • 1/2  serrano chile, seeds and membrane removed, (1-1/2 teaspoon), or more to taste
  • 1 cup, puréed tomato
  • 1 Persian cucumber (about 7” long), peeled and chopped (1/2 cup)
  • 3 tablespoons lime juice, or more to taste
  • ½ teaspoon freshly ground black pepper
  • 6 basil leaves, chiffonade (thinly sliced)


  1. In a small saucepan, add 1 cup water, the dates, vanilla extract, mint, orange & lemon zest.  Bring to a boil, cover, remove from heat and steep for 30 minutes.
  2. In the meantime, in a medium sized mixing bowl, place the prepared apricots, minced garlic, minced serrano, tomato purée, chopped cucumber and lime juice.
  3. Once the water is infused with the aromatics, strain, reserving the liquid and the soaked dates. Discard other ingredients.
  4. Place dates and infused water, along with all of the other ingredients, in the container of a high speed blender, or food processor. Blend until combined.
  5. Taste to see if more lime juice, garlic, serrano, or black pepper is needed.
To Serve:

Pour in beautiful bowls and garnish with thinly sliced basil.
