Almond Butter and Jelly Sandwich (AB&J)

I developed this recipe, “on the fly,” when I was at a culinary conference workshop on “How to Present a Recipe on Television.”  The producer asked each of us to show how to make a PB&J sandwich in exactly 2 minutes, expressing our unique point of view!  No practice time was given!

Since Garden of Eydie is all about elevating the nutritional content of recipes, and making it elegant to eat, my mind immediately went to how to make the original recipe healthier and prettier to serve. Almond butter and Jelly hors d’oeuvre (AP&J), was born.  Salt and oil free almond butter and a quick homemade strawberry balsamic jelly replaces store bought, not so healthy peanut butter and jelly.  AP&J is party worthy and delicious for the kids too!


For the Strawberry Jelly:
  • 1 tablespoon balsamic vinegar 
  • 1 cups sliced strawberries 
  • 1  tablespoon maple syrup, or more to taste 
  • 2 teaspoons lemon juice, or more to taste
For the Sandwich or Hors d’oeuvre:


Make the Strawberry Balsamic Jelly:
  1. In a 2-3 quart saucepan, over medium heat, add the balsamic vinegar and let it simmer until slightly reduced, and a little syrupy, for just about 30 seconds to 1 minute. Pour in the sliced strawberries and mix to combine.  Add in maple syrup and lemon juice and let simmer until the strawberries break down and the jelly starts to thicken. Taste and adjust seasonings, if needed.
  2. Remove from the heat and place the mixture in a bowl.  Let cool, then place the jelly in the refrigerator and let thicken, for an hour or so.
Make Sandwiches:

Spread a thin layer of almond butter on half of the toasted slices of bread.  Spread a thin layer of the jelly on the other toasted slices of bread.  Make sandwiches and slice in half. 

For Hors d’oeuvres:

Spread a thin layer of almond butter on each slice of toasted bread. Slice off the crust on all sides, and cut into quarters, Spoon a dollop of strawberry balsamic jam on top. Serve on a platter at your next party and wow your guests!
