Of course, we make it salt, oil, and sugar free, but trust me you won’t miss it. Tomatoes, inherently, have a super salty flavor, which helps us rely on spices to help further develop those flavors. By adding smoked sweet paprika and a pinch of heat, you’re sure to enjoy this healthier version, as much, or even more than the original!

Happy Birthday America! This is the Garden of Eydie way to celebrate the holiday healthfully. You can make this “cake” larger or smaller, depending on the size of your watermelon, and amount of berry toppings you add. It’s easy, healthy, fun to make, and oh so yummy!

I was inspired to make this Mexican fiesta salad/hors d’oeuvre after attending the Food Revolution Summit, this year. One of the best goals for eating we can have is to try to count the number of plants in each dish. Here we have over nine. This means we are getting tons of nutrition in every bite!
Garam Masala Lentils, Cauliflower Rice, Orange & Cashew Cream
I get so excited when I learn about super nutrient rich foods that are healing and vibrant, easy to make and oh so delicious. Sprouts fill the bill! They are tiny but mighty, nutrition wise. In fact, sprouts win the gold medal for the most nutrient rich food! They have 20-30x the nutrients of other vegetables and 100X more than meat! This dish is so good, so refreshing, so energizing! I changed the recipe a very little bit by replacing the salt with lemon in the cashew cream and left out the oil. It did not need it!
I spent many years as a recipe tester for Leite’s Culinaria. This unusual salsa recipe was voted “Tester’s Choice” and it sure is a favorite of all my friends and family. The original recipe calls for 1 tsp. sugar and 2 tsp. salt. We omit these ingredients and add extra lime juice and more spice, which really makes the salsa sing.
Watermelon Margherita Pizza
It’s National Watermelon Day and most people on the web make a beautiful watermelon pizza with coconut cream sauce and lots of berries on top. I love Trompe l’oeil (a visual illusion in art). So I wanted to make this raw fruit pizza look like a real Margherita pizza. We used mashed banana for the crust, blended strawberries for the tomato sauce, whipped coconut cream for the mozzarella cheese and mint. Easy to make and such a delightful surprise for your guests!
