Grilled Fava Bean Hummus

I was “blessed” this year with two large beautiful Fava Bean plants, which produced about 12 lbs of fava beans. Thank goodness, not all at the same time!  This way I could pick a few at a time, shell them, and use them in a variety of ways: cooking them and adding to salads, or mix with baked mushrooms and other steamed veggies, make fava bean crostini, and grill them for this delicious hummus!  You’ll get just a hint!


Roasted Red Bell Pepper Tomato Sauce

Roasting is a wonderful way to maximize the flavor of vegetables, releasing their natural sugars and helping them caramelize.  The result is a sweet, nutty, toasty flavor! Yes please! This is a great trick and tip on how to make your food taste delicious without the addition of salt, oil or sugar! 

Here we serve it with steamed zucchini noodles but it’s also great on all roasted or steamed vegetables or made into a roasted bell pepper hummus. 


Refreshing Citrus Salad Dressing

This citrus dressing made with lime and orange juice is not only delicious and healthy and very low fat and salt, it is super nutritious.  Vitamins and minerals abound and will make any salad sing with delight!


Romesco Sauce

Romesco Sauce is smokey, tart, sweet and spicy, it satisfies all of our taste sensations.  Romesco is a tomato-based sauce that originates from Catalonia. Fishermen made it to be eaten with fish.  Garden of Eydie loves it with veggie noodles:  steamed butternut squash noodles, zucchini noodles, cucumber noodles, you name it.  It’s a fabulous, easy to make sauce you can use for almost any plant based meal. Tip: make double or triple batch and freeze in ice cube trays or BPA-free zip top bags. It only takes a few minutes at room temperature to defrost or microwave for a few seconds.
