Pea-Mole with Mango Dip and Sprouted Grain Tortilla Chips

Who doesn’t love guacamole? It’s so good, we often find ourselves eating an entire bowl of dip all at once. That’s a whole lot of calories and too much fat, and If you’re trying to lose weight, this is not the best idea! Even plant-based fats can clog our blood vessels (see info here). There is a solution!!! Swap the avocado with highly nutritious and low-fat peas. Here’s Garden of Eydie low fat/low-calorie version of guacamole with sweet mango.

Ingredients

  • 1 bag of frozen peas or, 16 oz. freshly shelled
  • ½ red onion finely chopped (or more to taste)
  • 1 Mango peeled, flesh removed and diced to ¼”
  • 1 serrano chile, seeded and finely minced
  • 1 lime, juiced (or more to taste)
  • ½ cup cilantro, finely minced
  • 1/8 tsp. salt (optional)
  • 1 lime, cut in half
  • Ezekiel 4:9 Sprouted Grain Tortillas or other whole food, plant-based fat-free tortillas

Instructions

Cook the Peas :

If using fresh peas:

1- Place a pot filled with water over high heat and bring to a boil. Add peas, and turn the heat to a low simmer.  

2- Cook for about 10 minutes, or until the peas are tender.

3- Drain and refresh in a bowl of ice water.

If using frozen fresh peas, follow the directions on the bag for best results.


Make the Pita Chips:

1- Preheat oven to 400°.

2- Take one package of Ezekiel 4:9 sprouted grain tortillas (6 large tortillas) and sprinkle each tortilla with a little lime juice, rub to cover the entire tortilla. The lime juice gives the tortilla chips a nice tang, and eliminates the need for salt!

3- Cut pieces into triangles, rectangles, any way you’d like. You can even fold these particular tortillas to the desired shape, and they will separate, easily.

4- Place on parchment lined large sheet pan, and bake for 3 minutes. Flip over and bake 2-½-3 minutes more, or until the edges turn golden brown. These toast quickly and will become bitter if they get too brown.

5- Remove tortillas from the sheet pan to a cooling rack to crisp.


Make the Pea-Mole:

1- In a bowl, mix the onion, mango, serrano, lime juice, and cilantro until combined.

2- Taste and add more lime juice, if needed.  

3- Add a pinch of salt (optional).

4- Serve with toasted tortilla chips.
