I grew up playing with a Mr. Potato Head and it brought back such fond memories. So I thought it would be fun to make an edible Mr. Potato Head, your kids will surely enjoy. This is a “make it your own” meal and great to let the kids pick out the ingredients to make the potato look like a person! Here’s what I did for this particular lunch:
1- Using a paring knife, make slits in potato to make room for the facial features:
2- Start from top of the head down! Insert bell pepper hair, black bean eyebrows, then place the radish eyes under the eyebrows, using a bit of hummus as glue. Now the carrot nose, and finally the cherry tomato lips,
3- Place potato head on hummus dressed greens and sprouts, and garnish with steamed veggies of choice.
How about adding a mustache or goatee! If you have room, you can make an entire body! Cauliflower floret ears, broccoli hands, sugar snap pea shoes. Lots of fun ideas. Let the kids play with their food!
