Mango Gazpacho Dressing

This mango tomato dressing is like a summer gazpacho. I created to be served on top of the my Cauliflower Salad.  It so good, you can just have it as a soup all on its own! It will also taste delicious on green salads, steamed or roasted vegetables, and even as a sauce on top of banana “nice cream!”   

For the Mango Gazpacho dressing:

  • 1/1-2  lb. sweet, ripe tomatoes (or heirloom…whichever you prefer)
  •      (about 4-8 tomatoes), cored and diced into ¼” pieces, separated
  • 1-1/2 lb. mango (about 1 large mango), seeded, peeled and diced into ¼” pieces, separated
  • 2 limes, juiced, or more to taste
  • 2 red bell peppers, stemmed and seeded, roughly chopped
  • 2 cloves garlic, skinned and finely chopped
  • Freshly ground black pepper or red pepper flakes to taste

For the Dressing:  

  1. Place the diced tomatoes, diced mango, bell peppers, lime juice, and garlic into the bowl of a food processor or blender. Blend until smooth. Add pepper to taste, and reserve.

Use as dressing for your favorite raw salad, serve as a gorgeous gazpacho soup, or use it as a sauce with your favorite veggies!
