French Herb Salad with Citrus Dressing

French Herb Salad or Salade aux Fines Herbes French Women don’t get fat! 

They say it’s their Mediterranean diet, rich in fruit, vegetables, leafy greens, herbs, legumes and grains. This herb salad is a regular.  Filled with the fines herbs, such as parsley, chives, tarragon and chervil (not easily found).  We substituted dill and carrot greens which are all part of the same family as chervil, easily found. The citrus dressing is the perfect complement to the nutty French Arugula and herbs.


For the Salad:

  • 2 cups French Arugula, or baby arugula, cleaned and dried
  • 1 TB finely chopped chives
  • 1 TB finely chopped tarragon
  • 1 TB finely chopped parsley leaves
  • 1 TB finely chopped dill
  • 1 TB finely chopped carrot top leaves
  • 2 TB carrots, sliced paper thin round slices (cut in half if large)
  • Arugula flowers for garnish, if you can find them

For the Dressing:

  • Juice of 1 orange
  • Juice of 1 lemon
  • 1 garlic clove, chopped
  • ⅛ tsp. Dijon mustard
  • 1 date, pitted and finely chopped


Compose the Salad:

1- Add all of the salad ingredients into a large bowl.

2- Pour dressing over the greens and mix to combine.

3- Serve on pretty salad plates and garnish with Arugula flowers.

Make the Dressing:

1- Add all the ingredients to a small food processor or blender and blend until completely smooth.

To Serve:

Serve on pretty salad plates, garnish with Arugula flowers then drizzle citrus dressing on top and enjoy!
