French Women’s Herb Salad with Citrus Dressing (Salade aux Fines Herbes)

French Women don’t get fat!  They say it’s their Mediterranean diet rich in fruit, vegetables, leafy greens, herbs, legumes and grains. This herb salad is a regular amongst the French Women. Filled with fine herbs, such as parsley, chives, tarragon and chervil (not easily found).  We substituted dill which is part of the same family as chervil, and easy to find. If you can find chervil, by all means use it.  It’s delicate and delicious. The citrus dressing is the perfect complement to the nutty french arugula and herbs.

Ingredients

For the Salad:
  • 2 cups french arugula, or baby arugula, cleaned and dried 
  • 1 tablespoon finely chopped chives 
  • 1 tablespoon finely chopped fresh tarragon 
  • 1 tablespoon finely chopped parsley leaves 
  • 1 tablespoon finely chopped chervil or dill 
  • 2 tablespoons carrots, sliced into paper thin round slices (cut in half if large) 
  • arugula flowers or other edible flowers for garnish (optional)
For the dressing:
  • juice of 1 orange 
  • juice of 1 lemon 
  • 1 garlic clove, minced 
  • ⅛ teaspoon Dijon mustard
  • 1 Medjool date, pitted and finely chopped

Directions

Make the dressing:

Add all of the ingredients into a small food processor or blender and blend until completely smooth.

Compose the Salad:

Place all of the salad ingredients into a large bowl. Pour just enough dressing to lightly coat the greens and mix to combine, adding more dressing as needed.

To Serve:

Place salad mounds on pretty salad plates and garnish with arugula or other edible flowers for an elegant “french twist.”
