Charles M. Shulz said it first: “All you need is love. But a little chocolate now and then doesn’t hurt.”

I was creating a special Valentine’s dinner for my husband Ed, and wanted a sweet ending, plant based dessert to wrap up the lovely evening. I came up with this very decadent, delicious plant based version of an original chocolate fudge recipe that is salt, oil, and sugar free! We cut the fudge into hearts and scattered toasted walnuts flakes as an optional topping, which is great for eye health. This fudge is full of heart for you or your loved ones to enjoy, and it’s so simple to put together, you’ll be able to enjoy it for many more dates no matter what you’re celebrating!

Ingredients

  • 1 cup pitted dates (about 16 dates)
  • 1 cup smooth almond butter
  • 3 tbsp pure maple syrup
  • 2/3 cup + 2 tbsp cocoa powder
  • Optional: Toasted walnuts, ground, for topping

Directions

  1. Place a sheet of parchment paper on a large cutting board. Set aside.
  2. Purée dates in the bowl of a food processor or blender, creating a thick paste.
  3. Add almond butter and maple syrup. Purée again.
  4. Pour mixture into a large mixing bowl and add cocoa powder. Use your hands to combine and form mixture into a large ball.
  5. Place chocolate ball on parchment lined cutting board. Cover with a second sheet of parchment paper. You can either place another cutting board on top and push down to flatten it or you can use a rolling pin and roll it out to 1 inch thick.
  6. Use cookie cutters to cut into hearts, or other shapes of your choice, and top with crushed walnuts if wanted!Serve to your love and make memories that will last forever!
