The Best Vegan Cranberry Oatmeal Cookies

I must admit, I am definitely not a trained baker. Baking is a science, and vegan baking is a whole other skill. I was craving Cranberry Oatmeal cookies and wanted to make them super healthy, so I thought I’d give it that ole college try. After researching dozens of vegan cookie recipes and after 3 tries, I finally did it! These cookies are “the bomb!” The search is over! I don’t think you’ll find a more delicious and healthy plant-based cookie than this one.

Ingredients
- 2 cups gluten free rolled oats (not quick cooking)
- 2 teaspoons baking soda
- 2/3 cup unsweetened dried cranberries
- 1/2 cup diced apple, pureed in food processor
- ½ cup dark maple syrup
- 2 teaspoons vanilla extract, alcohol free
- 1 cup Almond Butter
Directions
Preheat oven to 350℉
- In a large bowl add oats, baking soda and dried cranberries, and give it a stir to combine.
- Add in wet ingredients: pureed diced apple, maple syrup and vanilla. Stir thoroughly until the cranberries are evenly distributed.
- Roll the dough into (12) 2-inch round balls and place on a 12” x 17” parchment lined sheet-pan, and place in the preheated oven.
- Bake cookies until golden brown, about 15-18 minutes, checking after 15 minutes.
- Remove the pan from the oven, and carefully place the cookies on a cooling rack, to cool completely and serve with a smile!
