Sweet Potato Black Bean Burger with Citrus Cauliflower Sauce

Did you know that certain foods are recognized as being able to prevent and reverse Alzhheimers disease and dementia?  Here’s a Garden of Eydie burger created with this fact in mind. The magical foods include: black beans, whole oats, flax seeds, herbs and spices, cruciferous vegetables, and dark leafy greens. Your tummy, your brain and your friends (even the carnivores!) will enjoy this brain enhancing meal.

 

Ingredients

For the Burgers:
  • 1-½ pounds sweet potatoes, baked and skinned
  • 1 flaxseed egg (mix 3 tablespoons of hot water & 1 tablespoon of ground flaxseed, sit for 15 minutes)
  • 1 serrano chile, seeds removed and finely chopped 
  • 1 small red onion, finely chopped (½ cup)
  • 3 garlic cloves, minced (1 tablespoon)
  • zest and juice of 1 lime, or more to taste
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon liquid smoke
  • ¼  teaspoon chipotle powder
  • ⅔ cup sprouted rolled, gluten free oats
  • ¼ heaping cup, coarsely chopped cilantro leaves
  • 1 (15 ounce) can no salt added Black Beans, drained, rinsed and patted dry
  • ½ large red bell pepper, seeded and diced to ¼-inch pieces
For the Cauliflower Sauce:
  • 1-½ pounds sweet potatoes, baked and skinned
  • 1 flaxseed egg

  • 1 small red onion, finely choppd (½ cup)
  • 3 garlic cloves, minced (1 tablespoon)
  • zest and juice of 1 lime, or more to taste
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon liquid smoke
  • ¼  teaspoon chipotle powder
  • ⅔ cup sprouted rolled, gluten free oats
  • ¼ heaping cup, coarsely chopped cilantro leaves
  • 1 (15 ounce) can no salt added Black Beans, drained, rinsed and patted dry
  • ½ large red bell pepper, seeded and diced to ¼-inch pieces
For the Garnish
  • 5 ounces organic baby arugula
  • diced cherry tomatoes
  • thinly sliced red onion
 

For the Burgers

Preheat the oven to 400℉

  1. In the bowl of a food processor place the mashed sweet potato, serrano chili, red onion, garlic, lime zest and juice, cumin, smoked paprika, liquid smoke, chipotle powder and oats.  Pulse until the mixture comes together. Add the black beans and cilantro and pulse a few times more to incorporate, keeping the mixture a little chunky…not puréed. Transfer the mixture to a bowl and add in the chopped red bell pepper. Mix to incorporate.
  2. Using wet hands, form the mixture into 6 patties and place on a parchment lined sheet pan.  Freeze for 15 minutes before baking.
  3. Slide the patties, on the parchment paper onto another sheet pan (room temperature) and place in the oven. Cook for 15 minutes, flip over and cook for another 8 minutes, or until the burgers are lightly browned..

Make in Advance: Bake the sweet potatoes, make the burger mixture and the cauliflower sauce up to 2 days in advance.  The formed patties can be frozen for up to 2 weeks. Thaw, slightly before baking.
