Kale Salad with Goji Berries and Tahini Turmeric dressing

Hail to the Kale, Goji’s and Turmeric!  Sound like an unusual combo? Yes it is and a good one at that!  If you’re looking for an immune booster and a delicious way to get tons of nutrients all in one bowl, you gotta try this!  The dressing can be a little thick, depending on the brand of tahini you are using.  Just add more water, to make it a dressing consistency.

Ingredients

For the Dressing:

(Makes 1 cup)

  • 4 tablespoons lemon juice (about 2 lemons), or more to taste
  • ½ cup filtered water, or more if needed 
  • ½ cup tahini, no salt or oil added
  • 1 large clove garlic, peeled and chopped
  • 2 tablespoons maple syrup
  • 1 teaspoon turmeric
  • ½ teaspoon cumin seed, ground
  • ½ teaspoon cayenne pepper, or more to taste (optional)
For the Salad:
  • 4 cups curly green kale, stems removed, and chopped
  • 8 medium size asparagus stalks, finely sliced into coins
  • 8 brussels sprouts, finely sliced
  • ½ cup goji berries, soaked in warm water for 10 minutes, or until soft, drained
  • freshly ground black pepper, to taste

Directions

For the Dressing:

Place all of the ingredients in the bowl of a food processor or blender, starting with the lemon juice and water, which will allow the tahini to blend in easily.  Process until very smooth. Taste and add more lemon juice, or other spices as needed.

For the Salad:

Place the kale, asparagus and brussels sprouts in a large serving bowl.  Spoon 2-3 tablespoons of the salad dressing on top, and using salad utensils or your hands, toss the salad ingredients until thoroughly mixed through. Taste and add black pepper and more dressing as needed. 

To Serve:

Either eat the entire salad yourself! or divide among 4 plates. Sprinkle softened goji berries on top.
