Fruit, Veggie and Cookie Dough Balls

Inspiration can come in many different ways. In this particular case, it was all about ease, and of course, taste. I wanted to create something simple, yet nutritious and delicious! Each “dough ball” has a unique quality to nourish the body, in different ways. For example, carrots are high in Vitamin C, which helps in the formation of collagen and absorption of iron. Blueberries are considered to be “the king of antioxidants”. They can protect against premature aging AND have the ability to reduce blood pressure. Cookie dough is…cookie dough.  Enough said!


Carrot Ball Ingredients:

  • 1 cup oats, ground
  • 1/4 cup medjool dates, pitted
  • 1 whole large carrot, peeled and grated
  • 3 TB oats for coating
  • 3 TB hemp seeds for coating

Blueberry Ball Ingredients:

  • 1-1/4 cup frozen organic or frozen wild unsweetened blueberries
  • 5 medjool dates, pitted
  • 1 cup + 1 TB whole oats
  • 1/2 cup toasted chopped walnuts
  • 1/4 cup medjool dates, pitted
  • 1/2 cup almond butter
  • 1/2 tsp vanilla extract
  • 1/4 cup oat flour
  • 2/3 cup cacao nibs


Carrot Ball Instructions:

1- In the bowl of a food processor or blender, grind 1 cup oats. Pour into a separate bowl and set aside.

2- Using the same food processor or blender, (no need to clean) puree the dates.  

3- When a smooth paste consistency is reached, add grated carrots and blend.

4- Lastly, add ground oats and blend.

5- Pour mixture into a large bowl.

6- Pour 3 TB hemp seeds and 3 TB oats onto a large plate.  

7- Form small dough balls using your hands and roll each individual ball in the hemp seed/oat mixture to coat.

8- Ready to eat!  Can be refrigerated overnight.

Blueberry Ball Instructions:

1- Blend blueberries.

2- Add dates and blend.

3- Pour into a medium-size bowl.

4- Add oats and mix with a rubber spatula.

5- Using wet hands, roll the dough to form small balls.

6- Ready to be eaten. Can be refrigerated overnight.

1- Blend dates creating date paste.

2- Pour into a medium-size bowl.

3- Add in almond butter and vanilla extract. Mix using your hands.

4- Add oat flour and mix with your hands.

5- Add cacao nibs. Mix with hands to distribute evenly throughout dough.

6- Form small dough balls with your hands and refrigerate for 20 minutes.

7- Enjoy!
